By recognizing the features of various glycans it monitors the glycan content of a starter culture and gives an indication of its quality. Following successful beta testing in R&D institutes and research laboratories in Israel and the USA, as well as industrial beta testing, NutriCognia has launched FermaFact a rapid Milk Fermentation glyco-analytical kit that can control the production process and product development as well as improving quality control procedures.
FermaFact belongs to the product line developed by NutriCognia aims at the dairy industry. FermaFact is based on CarboDeep, a proprietary technology that compares glycan mixtures and produces a fingerprint of the glycan composition.
Using frequent fingerprints to monitor the product during fermentation, the manufacturer can know — even before completion of fermentation process if a batch will not meet release standards. Real-time monitoring of product during fermentation will reduce batch loss and save time and costs.
FermaFact is the first commercially available glyco-array assay for Milk Fermentation. It will be launched during the 6th National Life Science and Technology Week, ILSI-Biomed Israel 2007, June 5-7 in Tel-Aviv.
